Alteration to a Healthy Start

Blueberry Applesauce Oatmeal Muffin

The muffins I posted earlier are so easy to make and easily versatile that I had to make them with blueberries! These muffins are so good and non fattening that you could make them once a week and not have to worry about eating them. They are so delicious! I just wanted to show everyone that there are small things you can do to recipes to make them fit your taste preference. I'd have to say I really enjoy this recipe because it takes little to no time to make and Wallah! you have great muffins to enjoy!

To change this recipe all I did was add frozen blueberries and 1/4 cup of brown sugar. I omitted the banana and the almonds this time because I felt like the blueberries would add enough flavor.

Healthy Start

Applesauce Banana Oatmeal Muffins

This weeks post is a healthier one due to my recent choice to eat better. These are not fattening muffins and yet are super delicious. I got the idea to make these muffins from a cook book called The Eat-Clean Diet Cookbook. I changed the recipe for my taste and added things that I love. I am a huge banana nut bread fan so I decided to add banana's to this recipe. My mom and I loved them so much we ate them all within 3 days. These are great muffins for anyone on a diet or trying to make better choices for themselves. If you aren't on a diet but want a tasty easy muffin this is also a great choice. However if you're looking for more sweetness you can add brown sugar (1cup), dried cranberries (1/4 cup), or dried cherries (1/4) cup.

Recipe:
Ingredients:
1 cup dry old-fashioned oatmeal
1 cup unsweetened applesauce (I made my own)*
1/2 cup skim milk, soy milk, rice or almond milk (your choice)
2 egg whites, beaten
2 Tbsp flax seed
1/2 cup almonds, chopped
1 banana (or 2 if you want a stronger banana flavor), mashed
1 Tbsp baking powder
1/2 tsp baking soda
1 tsp cinnamon
1 tsp ground nutmeg
3/4 cup whole-wheat flour

Preparation:
1) Preheat oven to 375 degrees F. Prepare muffin tin by lining with paper cups, or cooking spray.
2) Combine oatmeal, applesauce, milk, eggs, flax seed, and banana in a medium bowl. In another medium bowl, combine all dry ingredients, including almonds, mix together well. Pour dry ingredients into wet ingredients. Stir until all ingredients are combined well.
3) Using a small ladle or ice cream scooper, fill muffin tin 2/3 full. Bake 15 to 20 minutes. Cool on wire rack for 5 minutes. Serve with piping hot coffee or tea and enjoy.

*Homemade applesauce: Cut up one apple of your choice; for 1 cup of applesauce. Place in small saucepan over the burner with either a tiny bit of water or orange juice. Once the apple is soft put in food processor or blender and blend until it is the consistency of applesauce.


I hope this recipe fills your tummy and heart like it did mine. It is a great recipe to bring to a brunch and enjoy with some coffee or some orange juice.This might sound to good to be true but its Yummy, its Full of Flavor, and its Good for Your Body! Try it out and let me know what you think.
